Ackee and Salt Fish
Ingredients
450g (1lb) salt fish or cod
425g (15oz) tin ackee
2 fl oz vegetable oil
two rashers of bacon cut into strips
one large onion, chopped
two medium tomatoes, chopped
one medium pepper, chopped
1 tsp salt
1 tsp freshly ground pepper
four sprigs parsley, chopped (set some aside for garnish)
